Kohlrabi

Kohlrabi is a cross between a cabbage and a turnip.

It is stored in the fridge. 

To prepare, use vegetable peeler to remove outer skin. 

 

Kohlrabi is delicious raw with a little salt. Or topped on a salad gives a great crunch. It can also be baked in the oven with olive oil and salt to taste like french fries (you need about 3-4 to make this worth it).

 

Kohlrabi Cabbage Slaw
Slaw
3 C chopped cabbage
1-2 kohlrabi bulbs, peeled and grated
2 stalks celery, thinly sliced
2 carrots, thinly sliced or grated
2 T minced fresh onion or green onions
Dressing
1/3 C sugar
½ t salt
1/8 t pepper
1/8 t celery seed
½ C mayonnaise
4 ½ t apple cider vinegar

 

In a large bowl, toss together salad ingredients. In a separate bowl, whisk together dressing ingredients until smooth.

Pour dressing over slaw and stir to coat evenly. Chill in the refrigerator at least 1 hour before serving.

 

 

Festive Kohlrabi Slaw

 

1 recipe Apple Cider Vinaigrette (below)

1-2 kohlrabi, peeled and grated

2 C diced sweet red apples

2 C grated tart green apples

1 ½ C shredded red cabbage

1 C red grapes, halved

½ C chopped celery

½ C grated carrots

garnish with chopped walnuts (optional)

 

Apple Cider Vinaigrette:

¼ C apple cider vinegar

3 T canola oil

3 T honey

¼ t cinnamon

 

In a bowl, prepare vinaigrette. Whisk together very well. Chill.

 

Then in a large bowl, gently combine the kohlrabi, apples, cabbage, grapes, celery, and carrots. Stir vinaigrette once more then pour over salad. Gently stir to coat.  Cover and chill for about an hour. Before serving, toss salad again. 

 

NOTE: You'll want to finish this entirely because leftovers get soggy.

 

 

Roasted Kohlrabi Fries

2 kohlrabi bulbs

1 T olive oil

salt and pepper to taste

Parmesan cheese

 

Preheat oven to 450F.  Using e veggie peeler, peel the out skin off kohlrabi, then cut into 1/4-inch rounds.  Slice each round into 3 - 4 piece lengths resembling fries. In a bowl, toss "fries" in oil, salt, and pepper - be sure to coat well.  Bake 15-20 minutes, stirring mid-way.  Sprinkle with Parmesan and return to oven for 5 more minutes. Serve immediately.

 

NOTE:  This doesn't make a lot, just a great snack!  Try adding minced garlic scape to the oil mixture before baking for another great flavor!
