To store, keep broccoli dry and in a loose bag in the fridge.
To prepare, chop into pieces and soak in cold water.
Broccoli is delicious steamed by itself, in stir fry, or the Farabaugh favorite - Chicken and Broccoli Alfredo.
Chicken and Broccoli Alfredo
1/2 pkg. linguine (8oz.)
1 c. broccoli flowerets
2 T. butter
1 lb. boneless, skinless chicken breasts cut into cubes
1 can (10 3/4 oz) Cream of Mushroom Soup
1/2 c. milk
1/2 c. grated parmesan cheese
1/4 tsp. pepper
Cook linguine according to pkg directions. Add broccoli for last 4 min of cooking time. Drain.
Heat butter in skillet. Cook chicken until browned, stirring often.
Add soup, milk, cheese, pepper and linguine mixture and heat through. Serve with more parmesan cheese.
Can substitue spaghetti for linguine.
